Chocolate brownie with cherry sauce

Ingredients:
For the brownie:
- 200 g of dark chocolate (minimum 70% cocoa)
- 150 g of butter
- 200 g of sugar
- 3 eggs
- 100 g of all-purpose flour
- 1 teaspoon of vanilla extract
- A pinch of salt
For the cherry sauce:
- 300 g of pitted cherries
- 100 g of sugar
- 1 tablespoon of lemon juice
- 1 tablespoon of cornstarch dissolved in 2 tablespoons of water
- 1 teaspoon of vanilla extract
Instructions:
For the brownie:
- Preheat the oven to 180°C (350°F) and grease a 20×20 cm (8×8 inch) square baking pan.
- Melt the chocolate and butter together in a double boiler or in the microwave in 30-second intervals, stirring until smooth.
- In a large bowl, beat the sugar with the eggs and vanilla extract until the mixture is smooth and creamy.
- Add the melted chocolate mixture to the beaten eggs and mix well.
- Incorporate the flour and salt, mixing until well combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes.
- Let cool in the pan before cutting into squares.
For the cherry sauce:
- In a medium saucepan, combine the cherries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the cherries release their juice and the sugar dissolves, about 5-7 minutes.
- Add the dissolved cornstarch and cook, stirring constantly, until the sauce thickens, about 2 minutes.
- Remove from heat and add the vanilla extract. Let cool slightly before serving.
To serve:
- Serve the brownies on individual plates.
- Pour a generous amount of cherry sauce over each brownie.
- Optional: Add a scoop of vanilla ice cream to complement the dessert.
