Nectarine Compote with Cinnamon

Ingredients:
- 6 white-flesh nectarines, pitted and chopped
- 1/4 cup sugar (adjust to taste)
- 1/4 cup water
- 1 teaspoon ground cinnamon
- Juice of 1 lemon
Instructions:
- In a large pot, combine the nectarines, sugar, water, cinnamon, and lemon juice.
- Bring to a boil over medium-high heat, then reduce the heat and simmer for 20-25 minutes, or until the nectarines are tender and the mixture has thickened.
- Stir occasionally and adjust the sugar to taste.
- Allow the compote to cool before serving. It can be served warm or cold and is perfect as a topping for desserts, yogurt, or as a pie filling.
