Nectarine Compote with Cinnamon

Ingredients:

  • 6 white-flesh nectarines, pitted and chopped
  • 1/4 cup sugar (adjust to taste)
  • 1/4 cup water
  • 1 teaspoon ground cinnamon
  • Juice of 1 lemon

 

Instructions:

  1. In a large pot, combine the nectarines, sugar, water, cinnamon, and lemon juice.
  2. Bring to a boil over medium-high heat, then reduce the heat and simmer for 20-25 minutes, or until the nectarines are tender and the mixture has thickened.
  3. Stir occasionally and adjust the sugar to taste.
  4. Allow the compote to cool before serving. It can be served warm or cold and is perfect as a topping for desserts, yogurt, or as a pie filling.
