Orange Chicken with Asparagus

Ingredients:

  • 4 chicken breasts
  • 1 cup orange juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon olive oil
  • 1 bunch asparagus, trimmed
  • Salt and pepper to taste
  • Orange slices for garnish

 

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the orange juice, soy sauce, honey, garlic, and ginger. Stir well.
  3. Place the chicken breasts in a baking dish and season with salt and pepper. Pour the orange mixture over the chicken.
  4. Bake for 25-30 minutes, or until the chicken is fully cooked and golden brown. The chicken should reach an internal temperature of 74°C (165°F).
  5. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the asparagus and sauté for about 5-7 minutes, or until tender.
  6. Serve the chicken with the asparagus and garnish with orange slices.
