Orange Chocolate Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 cup orange juice
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1/2 cup chocolate chips (optional)

 

Instructions:

    1. Preheat the oven to 180°C (350°F) and line muffin pans with paper liners.
    2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    3. In another bowl, whisk together the melted butter, eggs, orange juice, vanilla extract, and orange zest.
    4. Combine the wet ingredients with the dry ingredients, mixing until just combined. If desired, fold in the chocolate chips.
    5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
    6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
    7. Let cool for 10 minutes before transferring to a wire rack to cool completely.
