Peach and Burrata Salad

Ingredients:

  • 4 peaches, pitted and sliced
  • 1 ball of burrata cheese
  • 4 cups of mixed greens (spinach, arugula, lettuce)
  • 1/4 cup toasted walnuts or almonds
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

 

Instructions:

  1. In a large bowl, combine the mixed greens and peach slices.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, and honey until well combined.
  3. Drizzle the dressing over the salad and toss gently.
  4. Place the burrata cheese on top of the salad and sprinkle with the toasted walnuts or almonds.
  5. Season with salt and pepper to taste. Serve immediately.

 

Peach and Mango Smoothie

  • Preparation Time: 10 minutes

 

Ingredients:

  • 2 peaches, pitted and chopped
  • 1 mango, peeled and chopped
  • 1 cup plain yogurt
  • 1/2 cup milk (can be cow’s milk or a plant-based alternative)
  • 1 tablespoon honey (optional)
  • Ice to taste

 

Instructions:

  1. Place the peaches, mango, yogurt, milk, and honey in a blender.
  2. Blend on high speed until smooth.
  3. Add ice to taste and blend again until the ice is well incorporated.
  4. Serve immediately.
